Chiller Van Sizes Explained: How to Work Out What You Actually Need
Almost every rental site publishes the same size table: 1-ton for small businesses, 3-ton for medium, 7-ton for large. That tells you nothing useful. Here is how sizing is actually decided.

The most common booking mistake in UAE cold chain is not choosing the wrong temperature — it is choosing the wrong volume. Businesses undersize because the daily rate looks better, then discover on the third stop that the load will not fit, or oversize by two classes and pay for air. Both are avoidable with about ten minutes of arithmetic before you call anyone.
01 Payload Ratings Mislead Almost Everyone
A refrigerated vehicle is sold to you by weight — 1-ton, 3-ton, 7-ton. That figure describes what the chassis can legally carry. It has very little to do with what will physically fit inside an insulated body, because insulation eats space and chilled cargo is usually light for its size.
Consider a produce distributor moving crated leafy greens. A crate of lettuce might weigh four or five kilograms and occupy the same footprint as a crate of frozen chicken weighing twenty. Load a 1-ton van to its full cubic capacity with leafy produce and you will be nowhere near a ton. Load the same van with dairy in cases and you will hit the weight limit with the roof still empty.
The rule that actually holds
- Light, bulky cargo — produce, bakery, flowers, packaged salads — is limited by volume. Size up for cubic space.
- Dense cargo — bottled beverages, dairy in cases, frozen protein, chilled water — is limited by weight. Size up for payload rating.
- Mixed loads are limited by whichever ceiling you reach first, which is almost always volume in food distribution.
When you call dispatch, the useful sentence is not “I need a 3-ton van.” It is “I’m moving 14 crates of X and 6 cases of Y, roughly this tall stacked.” That lets the vehicle be chosen rather than assumed.
02 Do the Pallet and Crate Arithmetic First
Even if your goods never touch a pallet, thinking in pallet footprints is the fastest way to estimate. A standard Euro pallet footprint is 120 × 80 cm; the standard industrial pallet is 120 × 100 cm. Most UAE food distribution runs on one of the two, or on plastic crates that stack to roughly the same footprint.

Figures are indicative of the classes commonly available in the UAE market and vary by chassis and body build. Confirm the internal dimensions of the specific vehicle you are quoted — two vans of the same nominal tonnage can differ by half a metre of usable length once the evaporator housing is accounted for.

Request internal length, internal width between the wheel arches, and internal height at the rear door — not the exterior dimensions. The wheel arch measurement is the one that decides whether pallets sit side by side or in single file.
03 High-Roof Is a Capacity Decision, Not a Comfort One
High-roof refrigerated vans are usually marketed on driver comfort — you can stand up inside. That is the least important thing about them. The real value is that stacking height is often the cheapest capacity you can buy.
If your crates stack safely three high in a standard van and five high in a high-roof, you have added roughly sixty per cent capacity for a small rate difference and no change in vehicle footprint, licence class or city access. For bakery, produce, floral and packaged goods, that is frequently a better answer than moving up to a truck.
Where extra height stops helping
Two limits apply. First, cold air needs to circulate; stacking to the ceiling and blocking the evaporator outlet will cause the top of the load to run warm even though the display reads correctly. Leave clearance at the discharge point. Second, crates that are not designed to interlock become unstable above four high, and an unstable stack that shifts in transit is a bigger problem than a second trip.
04 The Door Aperture and the Loading Dock Decide More Than You Think
Volume is only useful if cargo can get through the opening and the vehicle can get to the opening. Two constraints regularly override the size calculation entirely.
- Rear aperture heightTall trolleys, roll cages and stacked crates on a dolly must clear the rear door frame, which is always shorter than the internal height. If you load on wheels rather than by hand, measure the trolley, not the cargo.
- Dock height and tail liftIf your pickup or delivery point has no dock and no forklift, floor height matters enormously. A van with a low load floor can be hand-loaded; a truck bed at chest height cannot. That is when a tail lift truck stops being a luxury and becomes the only workable option.
- Site accessBasement loading bays in Downtown Dubai, DIFC and several Business Bay towers have height barriers that admit a van and reject a truck outright. Older Deira and Bur Dubai streets have turning radius limits. A vehicle that cannot reach the door has no capacity at all.
- Time-of-day restrictionsSome central districts restrict heavy vehicle loading during peak windows. A van may be able to complete a delivery at 10am that a truck can only do at 6am.
05 Multi-Drop Routes Change the Answer Completely
Single pickup, single drop is easy: size to the load. Multi-drop is different, and it is where most sizing decisions quietly go wrong.
On a run with eight stops, the vehicle is only full at the start. By the fifth stop, two thirds of the cubic space is empty, cold air is circulating around a shrinking load, and every door opening is warming a larger air volume. That has three consequences.
- Sizing to the total daily volume can mean running a large, mostly empty box for the back half of the route — which is both expensive and thermally inefficient.
- Two smaller vehicles running parallel routes will often beat one large vehicle running a long sequential route, once you count driver hours, fuel and the risk of the final drop arriving late.
- Load sequencing matters: last-off should be loaded first and positioned away from the door, so that repeated openings do not repeatedly hit the cargo that has the longest journey ahead of it.
If you are planning recurring multi-drop distribution rather than a one-off move, send dispatch the stop list rather than the total volume. The route shape, not just the cargo, determines the vehicle.
06Three Real Sizing Decisions
Case 01
Cloud kitchen, 6 outlets, daily prep run
Roughly 40 insulated food carriers, light, delivered across Al Quoz, Business Bay and JLT before 10am. Volume-limited, access-limited, time-limited. Answer: 1.5-ton high-roof chiller van. The height absorbs the carriers, the van clears basement bays, and one vehicle covers the sequence inside the window.
Case 02
Dairy distributor, Sharjah to three supermarkets
Cased product, heavy, palletised, delivered to sites with docks. Weight-limited, not volume-limited. Answer: 3-ton chiller truck. The payload rating is the binding constraint, the docks remove any lift problem, and pallet handling makes the turnaround fast.
Case 03
Florist, wedding season, hotel deliveries
Very light, very bulky, extremely fragile, tall arrangements that cannot be stacked at all. Volume-limited with a hard height requirement. Answer: high-roof chiller van, loaded single-layer. Payload rating is almost irrelevant here; floor area and standing height are everything.
Case 04
Restaurant opening, stock plus equipment
Chilled and frozen opening stock, plus dry goods, furniture and equipment. Answer: a chiller van and a flatbed on the same day. Forcing everything into one refrigerated body wastes cold capacity on cargo that does not need it — see our note on running mixed loads.
07 Frequently Asked Questions
What size chiller van do I need for a small restaurant?+
Most single-site restaurants are well served by a 1-ton chiller van for daily or every-other-day resupply. The deciding factors are how many crates you move per run and whether the delivery point can take a van at the time you need it. If you are supplying two or three outlets on one run, a 1.5-ton high-roof van is usually the better economics because the extra stacking height costs far less than a second trip.
Is a high-roof chiller van worth the extra cost?+
If your cargo is light and stackable, almost always. Extra height is the cheapest capacity available because it does not change the vehicle footprint, the licence class or the site access. If your cargo is dense, or cannot be stacked at all, the extra height adds nothing and you should be looking at payload rating or floor area instead.
How many pallets fit in a 3-ton chiller truck?+
Typically four to six pallet footprints at floor level, depending on the body build and whether pallets are Euro or industrial size. Always confirm internal length and the width between wheel arches for the specific vehicle quoted, since two trucks with the same nominal tonnage can differ noticeably in usable space.
Should I book one large vehicle or two small ones for a multi-drop route?+
It depends on the route shape rather than the total volume. A long sequential route with many stops often runs better as two parallel routes in smaller vehicles, because you cut driver hours, reduce door-open exposure per vehicle and protect the last drop from cumulative delay. Tell dispatch as early as possible. If the load will not fit, a second vehicle or an upsize is far cheaper than a failed delivery or a load left standing in ambient heat on a loading bay. We would rather change the vehicle the night before than send one that cannot do the job.
